Cranberry Pumpkin Muffins

Serves 12

 Ingredients

  • 1½ cups white flour
  • ½ cup oat flour
  • ¾ cup sugar
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. cinnamon

Muffins!

 


  • ½ tsp. allspice
  • 1/3 cup canola oil
  • 2 large eggs
  • 1 cup canned pumpkin
  • 1 cup fresh or frozen cranberries, chopped

Directions

  1. Preheat oven to 400 degrees.
  2. Sift together dry ingredients, set aside.
  3. Beat oil, eggs, pumpkin together until blended and add to dry ingredients. Stir just until moistened.
  4. Fold in chopped cranberries.
  5. Spoon into paper-lined muffin cups.
  6. Bake for 15-25 minutes, until the top of the muffin bounces back when lightly touched.
